  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups sliced bell peppers (mixed colors)
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Slice the bell peppers and onion into thin strips and mince the garlic.
  2. Place the chicken breasts in the slow cooker and season with cumin, chili powder, salt, pepper, and lime juice.
  3. Layer the sliced bell peppers and onion on top of the chicken.
  4. Pour the chicken broth over the mixture until just covered.
