  • 34 lbs beef chuck roast
  • 4 large carrots, thickly sliced
  • 3 medium Yukon Gold potatoes, quartered
  • 1 large onion, coarsely chopped
  • 4 cups low-sodium beef broth
  • 2 tsp garlic powder
  • 1 tsp dried thyme

Instructions

  1. Sear the beef chuck roast in a hot skillet until browned on all sides.
  2. Place chopped carrots, potatoes, and onion at the bottom of the slow cooker.
  3. Season the seared roast with garlic powder and thyme, then place it on top of the veggies.
  4. Pour beef broth over everything until just submerged.
