  • 1 tsp dried sage
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off the mini pumpkins and scoop out seeds and pulp; set aside.
  3. In a skillet over medium heat, sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  4. Add ground meat to the skillet, cooking until fully browned.
  5. In a large bowl, combine cooked rice, meat mixture, cheddar cheese, thyme, sage, salt, and pepper; mix well.
  6. Stuff each pumpkin with the filling and place them upright in the baking dish.
  7. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until tender.
