  • 1 lb lean ground beef or turkey
  • 3 medium bell peppers (mixed colors), halved and seeded
  • 1 can (15 oz) diced tomatoes (with juice)
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté diced onions and minced garlic until soft (about 5 minutes).
  3. Add ground beef or turkey to the skillet. Cook until browned (about 7 minutes), then drain excess grease.
  4. In a large bowl, mix cooked rice, diced tomatoes (juice included), spices, and half of the shredded cheese with the meat mixture until combined.
  5. Place halved bell peppers in the baking dish and fill each half generously with the mixture.
  6. Cover with foil and bake for 30 minutes. Uncover, sprinkle remaining cheese on top, and bake an additional 10 minutes until bubbly.
