  • 1 cup long-grain white rice
  • 1 oz taco seasoning (1 packet)
  • 14.5 oz canned diced tomatoes with green chilies
  • 1 cup shredded sharp cheddar cheese
  • 15 oz canned black beans, drained and rinsed
  • ½ cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, then stir in taco seasoning, diced tomatoes, and black beans. Cook for another 5 minutes.
  3. Prepare the rice according to package instructions; fluff once cooked.
  4. In the prepared baking dish, layer half of the rice, half of the beef mixture, and half of the cheese. Repeat layers and top with remaining cheese.
  5. Cover with foil and bake for 25 minutes. Remove foil for the last 10 minutes to let cheese bubble.
  6. Cool slightly before serving with dollops of sour cream on top.
