Ingredients

Scale
  • 4 lbs bone-in pork shoulder
  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1/4 cup apple cider vinegar
  • 1 cup BBQ sauce (your favorite brand)
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Trim excess fat from the pork shoulder and rub the spice mixture (brown sugar, paprika, garlic powder, cayenne) all over the meat.
  2. Set the Instant Pot to 'Sauté' mode. Add oil and sear the pork on all sides until golden brown.
  3. Remove the pork and deglaze the pot with apple cider vinegar and chicken broth, scraping up any bits from the bottom.
  4. Return the pork to the pot and pour BBQ sauce over it. Seal and cook on high pressure for 60 minutes.
  5. Allow natural pressure release for about 10 minutes, then shred the pork using two forks.
  6. Stir in more BBQ sauce if desired and serve on buns or over rice.

Keywords: For extra flavor, consider adding sliced onions or jalapeños during cooking. Let pulled pork rest after cooking for enhanced tenderness. Store leftovers in an airtight container; they can be frozen for future meals.
