  • 2 bay leaves
  • Flour or corn tortillas (for serving)

Instructions

  1. Cut the pork shoulder into large chunks (about three inches).
  2. Set the Instant Pot to 'Sauté' mode. Add a splash of oil and sauté the onions until soft and translucent (about 5 minutes).
  3. In a bowl, season the pork chunks with garlic, cumin, chili powder, oregano, salt, and pepper; toss until well-coated.
  4. Add seasoned pork to the pot over the onions. Pour in orange juice and add bay leaves; close the lid securely.
  5. Set the Instant Pot to 'Manual' high pressure for 60 minutes. Allow for a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  6. Remove pork from the pot and shred it using two forks. Serve hot on tortillas with your favorite toppings.
