  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped

  • 2 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • 1 tsp honey (optional)

Instructions

  1. Chop the cucumber into bite-sized pieces. Halve the cherry tomatoes and finely chop the red onion. Roughly chop the parsley.
  2. In a colander, drain and rinse the garbanzo beans under cold water.
  3. In a large bowl, combine the cucumber, garbanzo beans, cherry tomatoes, red onion, and parsley. Toss gently.
  4. In a separate bowl or jar, whisk together lemon juice, olive oil, and honey until combined.
  5. Drizzle the dressing over the salad and toss gently until all ingredients are coated.
  6. Serve immediately or let chill in the fridge for 30 minutes to enhance flavors.
