Instructions

  1. Prepare vegetables by washing and chopping the cabbage, slicing the carrots, and chopping the celery. Mince the garlic.
  2. In a large pot over medium heat, drizzle 2 tbsp olive oil and sauté minced garlic until fragrant.
  3. Add sliced carrots and chopped celery; cook for about 5 minutes until slightly softened.
  4. Pour in vegetable broth and add diced tomatoes. Bring to a gentle boil.
  5. Stir in cabbage and Italian seasoning; reduce heat and simmer for about 20 minutes until all vegetables are tender.
  6. Season with salt and pepper to taste before serving.
