  • 1 cup bell peppers (mixed colors, cut into chunks)
  • 1 medium red onion (cut into large chunks)
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 3 cloves garlic (minced)
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, oregano, salt, and pepper to create the marinade.
  2. Add beef cubes to the marinade and toss until coated. Let marinate for at least 30 minutes.
  3. While beef marinates, chop bell peppers and red onion into similar-sized pieces.
  4. Thread marinated beef and veggies onto skewers, alternating between them.
  5. Preheat grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  6. Grill kabobs for about 10–15 minutes, turning occasionally until charred and cooked through.
