  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 medium sweet potatoes (about 1 lb), diced
  • 2 tbsp olive oil
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp paprika

Instructions

  1. Dice sweet potatoes into bite-sized cubes and slice chicken into strips or cubes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sweet potatoes, seasoning with salt, pepper, and paprika. Cook for about 10-15 minutes until golden brown.
  3. Push sweet potatoes aside or remove them from the skillet. Add another tablespoon of olive oil if needed and cook chicken for 7-10 minutes until golden brown and cooked through.
  4. Stir in minced garlic during the last minute of cooking, then add spinach until wilted.
  5. Combine everything in the skillet, adjusting seasoning as necessary.
  6. Serve hot from the skillet or on plates with an optional drizzle of olive oil.
