  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to 'Sauté.' Add a splash of oil and sear the beef on all sides until browned (about 5 minutes per side). Remove the beef.
  2. Sauté diced onion and minced garlic until fragrant (about 2 minutes).
  3. Deglaze with 1 cup of beef broth, scraping up brown bits from the bottom.
  4. Return the beef to the pot with carrots, potatoes, thyme, bay leaves, and remaining broth. Stir gently.
  5. Seal the lid and cook on manual pressure for 35 minutes. Allow natural release for 10 minutes before quick-releasing any remaining pressure.
  6. Remove bay leaves and shred larger pieces of beef if desired. Serve hot.
