Instructions

  1. Season the chuck roast with salt and pepper.
  2. Set the Instant Pot to 'Sauté' mode. Add oil and brown the beef chunks in batches until crusty.
  3. Remove the beef and sauté onions and garlic until fragrant. Return beef to pot with carrots and potatoes.
  4. Pour in beef broth, Worcestershire sauce, bay leaves, and thyme. Mix well.
  5. Seal the lid and set to 'Manual' high pressure for 35 minutes.
  6. After cooking, allow natural pressure release for 10 minutes before quick release. Discard bay leaves and serve hot.
