Instructions

  1. Set the Instant Pot to 'Sauté.' Add oil, onions, and garlic; sauté for about 3 minutes until fragrant.
  2. Stir in the diced carrots and lentils; mix well.
  3. Pour in vegetable broth until covered; season with salt, pepper, and herbs of choice.
  4. Secure the lid and cook on 'Manual' high pressure for 8 minutes.
  5. Meanwhile, boil potatoes in salted water until tender (about 15 minutes). Drain and mash with butter (or olive oil), adding salt and pepper to taste.
  6. Once cooking is complete, release pressure carefully. Spoon the lentil mixture into an oven-safe dish, top with mashed potatoes, then broil for about 5 minutes until golden brown.
