Instructions

  1. Season lamb shanks with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear shanks until browned on all sides (about 3-4 minutes per side).
  2. In the same skillet, sauté onions and garlic until soft and fragrant (about 5 minutes).
  3. Transfer lamb shanks to a slow cooker or pot; add sautéed onions, garlic, carrots, red wine, beef broth, tomato paste, rosemary, and thyme. Stir gently to combine.
  4. Cover and slow cook on low for 8 hours or high for 4 hours. For oven cooking, braise at 300°F for about the same time.
  5. Check for tenderness; meat should easily pull away from the bone. Adjust cooking time as needed.
