  • 8 oz spicy chorizo, crumbled
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, diced
  • 1 cup green or brown lentils, rinsed
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 tsp ground cumin
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to 'Sauté' mode. Add olive oil and sauté onion, carrots, celery, and garlic until softened (about 3 minutes).
  2. Add the crumbled chorizo and cook until browned.
  3. Stir in lentils, diced tomatoes (with juice), cumin, red pepper flakes, salt, and pepper.
  4. Pour in vegetable broth without stirring too much.
  5. Close the lid securely and set to 'Manual' mode on high pressure for 10 minutes.
  6. After cooking, carefully use quick release for steam. Once safe, open the lid and stir well before serving.
