  • 4 lamb shanks (about 2 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 medium onions, chopped
  • 4 garlic cloves, minced
  • 1 cup dry red wine
  • 2 cups low-sodium chicken broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Sear the lamb shanks in olive oil over medium-high heat until golden brown on all sides. Remove and set aside.
  2. In the same skillet, sauté onions and garlic until translucent.
  3. Deglaze the skillet with red wine, scraping up browned bits. Simmer for 5 minutes.
  4. Add chicken broth, rosemary, thyme, salt, and pepper; stir well.
  5. Return lamb shanks to the skillet and cover them with sauce.
  6. Cook on low in a slow cooker for 6–8 hours or in an oven at 325°F (160°C) for about 3 hours until fork-tender.
