  • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes (canned)
  • 1 cup dry red wine
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt and pepper, then sear until browned on all sides (about 3 minutes per side).
  2. In the same skillet, sauté chopped onions and minced garlic until soft (about 3 minutes).
  3. Transfer onions and garlic to the slow cooker. Add crushed tomatoes, red wine, oregano, and basil; stir well.
  4. Nestle the seared beef into the mixture, ensuring it's submerged. Cover and cook on low for about 6 hours or until fork-tender.
  5. Remove beef from the slow cooker, shred it with two forks, and return it to the pot along with any juices.
  6. Serve over pasta or polenta, topped with grated Parmesan cheese.
