  • 4 medium-sized Yukon Gold potatoes (about 680g)
  • 4 cloves fresh garlic, minced
  • 1/4 cup extra virgin olive oil (60ml)
  • Juice and zest of 2 large lemons
  • 2 tbsp fresh or dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine olive oil, lemon juice and zest, minced garlic, oregano, salt, and pepper to create a marinade.
  3. Coat the chicken breasts in the marinade and let sit for at least 30 minutes.
  4. Cut potatoes into wedges and place them in a baking dish. Drizzle with olive oil and season with salt and pepper.
  5. Nestle the marinated chicken among the potato wedges. Squeeze an additional lemon over everything if desired.
  6. Bake for about 45 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden brown.
