  • 4 salmon fillets (6 oz each)
  • 1 lb new potatoes, halved
  • 12 oz fresh green beans, trimmed
  • 4 cloves fresh garlic, minced
  • Juice and zest of 2 lemons
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss halved new potatoes with 2 tbsp olive oil, salt, pepper, lemon juice, minced garlic, and half the lemon zest.
  3. Spread seasoned potatoes on a sheet pan in a single layer; roast for 15 minutes.
  4. Remove the pan from the oven and push potatoes aside. Add salmon fillets skin-side down next to them.
  5. Toss green beans with remaining olive oil, garlic, salt, and pepper before adding around the salmon.
  6. Bake for an additional 12-15 minutes until salmon is flaky and veggies are tender.
