  • 4 salmon fillets (6 oz each)
  • 2 cups bok choy, halved
  • 3 tbsp honey
  • 2 tbsp white miso paste
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 2 green onions, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together honey, miso paste, soy sauce, sesame oil, minced garlic, and lemon juice until smooth.
  3. Marinate the salmon fillets in half of the marinade for at least 15 minutes.
  4. Arrange halved bok choy on one side of the baking sheet.
  5. Place marinated salmon skin-side down next to bok choy and drizzle remaining marinade over both.
  6. Bake for 12-15 minutes or until the salmon flakes easily with a fork.
  7. Let rest for 2 minutes before serving and garnish with chopped green onions.
