  • 6 firm tomatillos, husked and rinsed (approximately 1 lb)
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime (about 2 tbsp)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and garlic. Rinse tomatillos and remove their husks.
  2. Set your Instant Pot to 'Sauté' mode. Add olive oil, onions, and garlic; sauté for about 3 minutes until fragrant.
  3. Add chicken breasts to the pot, pour in chicken broth, and season with salt and pepper.
  4. Add tomatillos and green chiles on top. Drizzle with lime juice and stir gently.
  5. Secure the lid and set the Instant Pot to 'Manual' on high pressure for 15 minutes.
  6. After cooking, allow for natural pressure release for a few minutes before quick-releasing any remaining pressure. Shred the chicken directly in the pot and stir in chopped cilantro. Serve hot.
