  • 1 large yellow onion, sliced

  • 1 cup BBQ sauce

Instructions

  1. Season the pork shoulder with salt, pepper, chili powder, and cumin.
  2. Sauté sliced onions in a skillet until translucent; add minced garlic and cook until fragrant.
  3. Place the seasoned pork in the slow cooker with sautéed onions and garlic. Pour BBQ sauce over it. Cook on low for 8 hours or high for 4 hours.
  4. While the pork cooks, grill pineapple rings until charred on both sides. Chop them for salsa.
  5. Mix grilled pineapple with diced red onion, cilantro, lime juice, salt, and pepper in a bowl.
  6. Once the pork is tender, shred it and assemble tacos in warm tortillas topped with charred pineapple salsa.
