Instructions

  1. In a slow cooker, combine chopped dark chocolate and heavy cream. Set to low heat and stir occasionally until melted and smooth.
  2. Remove from heat and stir in espresso powder, sugar, and vanilla extract until well combined.
  3. Allow the mixture to cool slightly before whisking in eggs one at a time.

  5. Place ramekins in the slow cooker on a folded kitchen towel; add hot water halfway up the sides of ramekins. Cover and cook on low for about 2 hours.
  6. Once cooked, remove ramekins from water bath and cool at room temperature before chilling in the fridge for at least 2 hours.
