  • 6 garlic cloves, whole or minced
  • 2 large sweet onions, sliced into thick rings
  • 2 tsp caraway seeds
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C). Pat the pork shoulder dry and rub generously with salt, pepper, and olive oil.
  2. In a roasting pan, layer the sliced onions at the bottom. Add whole garlic cloves and sprinkle caraway seeds on top.
  3. Place the seasoned pork shoulder on the onion-garlic mixture.
  4. Pour vegetable broth around the pork until it reaches halfway up the sides.
  5. Cover the pan tightly with foil and roast for about 4 hours or until internal temperature reaches at least 190°F (88°C).
  6. Remove foil during the last hour to crisp up the skin. Once done, let it rest before slicing.
