  • 1 cup plain breadcrumbs
  • 1 large egg
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup jellied cranberry sauce (divided)
  • 12 oz fresh or frozen green beans (trimmed)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix ground beef, breadcrumbs, egg, onion powder, garlic powder, and half of the cranberry sauce until just combined.
  3. Shape the mixture into a loaf on one side of the baking sheet.
  4. On the other side, spread green beans, drizzle with olive oil, and season with salt and pepper.
  5. Bake for about 30 minutes. Brush remaining cranberry sauce onto the meatloaf halfway through cooking.
  6. Continue baking for an additional 10-15 minutes until the meatloaf reaches an internal temperature of 160°F (70°C). Let rest for 5 minutes before slicing.
