For the Gnocchi

  • 1 package gnocchi choose shelf-stable or refrigerated varieties

For the Protein

  • 5-6 pieces raw peeled king prawns substitute with chicken or scallops if desired

For the Sauce

  • 1 cup pesto homemade or store-bought
  • 2 tablespoons unsalted butter
  • 2 cloves garlic chopped
  • 1/4 cup dry white wine optional, skip for non-alcoholic version

For Garnishing

  • 1/4 cup grated Parmesan substitute with Pecorino Romano or nutritional yeast for vegan option

Directions

  • Boil a large pot of salted water, then add the gnocchi. Cook for about 2 minutes, or until they float to the surface, indicating they’re ready. Drain and set aside.
  • While the gnocchi cooks, butterfly the king prawns and finely chop the remaining shrimp.
  • In a large non-stick pan, melt the butter over medium heat. Add the chopped garlic and whole prawns, cooking for about 2 minutes until just tender.
  • Pour in the white wine, mixing well. Add the chopped prawns to the pan and cook for another 2 minutes until they turn pink and opaque.
  • Gently stir in your prepared pesto, followed by the drained gnocchi. Mix well, ensuring every piece is coated, then season with salt, pepper, and a sprinkle of grated Parmesan.
