  • 1 medium Lime Juiced and zested
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper Freshly cracked
  • 1 medium Avocado Optional, diced
  • 1 medium JalapeƱo Optional, diced

How to Make Zesty Lime Black Bean Mango Salad

  • Rinse and drain the black beans, then dice the mangoes and red bell pepper. Finely chop the red onion and cilantro.
  • In a large bowl, combine the prepared black beans, diced mangoes, red bell pepper, red onion, and cilantro.
  • In a small bowl, whisk together the lime zest, lime juice, cumin, salt, and black pepper until well blended.
  • Pour the dressing over the salad mixture and gently toss to coat evenly.
  • Taste and adjust the seasoning as necessary, adding more salt or lime juice.
  • If adding avocado, gently fold in the diced pieces.
  • Refrigerate for 15-30 minutes to allow flavors to meld (optional).
  • Toss the salad again before serving and enjoy!
