  • 2 tablespoons Olive Oil Avocado oil is a great alternative.
  • 1 medium Onion Finely diced.
  • 2 medium Carrots Diced.
  • 2 stalks Celery Diced.
  • 4 cloves Garlic Minced.
  • 6 cups Chicken Broth Use vegetable broth for vegetarian.
  • 1 pound Chicken Breast Can substitute with thighs or beans.

Herbs & Spices

  • 2 leaves Bay Leaves Remove before serving.
  • 1 teaspoon Dried Oregano Use 1/3 less if fresh.
  • 1 teaspoon Dried Thyme Use 1/3 less if fresh.
  • 1 teaspoon Red Pepper Flakes Optional.

For the Heartiness

  • 2 cups Pasta Can substitute with rice or omit for gluten-free.
  • 2 tablespoons Lemon Juice
  • 1/4 cup Parsley Chopped.
  • 1/2 cup Parmesan Cheese Substitute with nutritional yeast for dairy-free.

Cooking Instructions

  • Heat olive oil in a heavy-bottomed pot over medium heat.
  • Add diced onion, carrots, and celery; cook for 5-7 minutes until softened.
  • Stir in minced garlic and sauté for another minute.
  • Pour in the chicken broth and add chicken breast, bay leaves, oregano, thyme, and red pepper flakes.
  • Bring to a gentle boil, then reduce heat and simmer for 25-30 minutes.
  • Remove chicken, shred, and return to pot.
  • Add pasta and cook until al dente, then stir in lemon juice and parsley.
  • Adjust seasoning to taste.
  • Garnish with parsley and Parmesan cheese if desired.
