For the Topping

  • 1 cup Parmesan Cheese Nutritional yeast can be used for a vegan alternative.
  • 1/4 cup Fresh Parsley Thyme can be used for different herb flavors.
  • 1/2 cup Breadcrumbs Fresh bread or panko can be used.

Preparation Steps

  • Slice onions thinly and heat olive oil in a skillet over medium heat. Add onions and a sprinkle of salt. Sauté for 30-40 minutes until they turn golden brown, stirring occasionally. If they stick, deglaze with beef broth.
  • In the same skillet, melt butter over low heat. Whisk in flour, cooking for a minute. Gradually pour in heavy cream, whisking to avoid lumps. Stir in ⅔ of the caramelized onions, seasoning with salt, pepper, and parsley, then mix in Parmesan cheese.
  • Boil salted water in a large pot, add cavatappi pasta, and cook until just under al dente (about 1-2 minutes less than package instructions). Reserve some pasta water before draining.
  • In the skillet with the béchamel sauce, gently fold in the cooked pasta. Adjust the consistency using reserved pasta water for a creamy texture that clings to the pasta.
  • Preheat oven to 350°F (175°C). Transfer the mixture to a greased baking dish. Top with the remaining onions and breadcrumbs. Bake for 10-15 minutes until the topping is golden and crispy.
  • Allow the dish to sit for a few minutes before serving. Garnish with fresh parsley and enjoy with a side salad or crusty bread.

Notes

Optional: Sprinkle with extra cheese before baking for a richer flavor. This dish is perfect for batch cooking and can be stored easily.
