How to Make Air Fryer Veggie Fritters

  • Grate the zucchini and squeeze out the excess moisture using a clean kitchen towel.
  • In a mixing bowl, combine the dried zucchini with the egg, breadcrumbs, and spices. Mix gently until just combined.
  • Preheat the air fryer to 375°F for a couple of minutes.
  • Scoop about 2 tablespoons of the mixture, shape into 2-inch patties, and brush olive oil on both sides.
  • Place patties in a single layer in the air fryer basket and cook for 5 minutes, flipping halfway through.
