Making the Rolls

  • Prepare the Dough: In a large mixing bowl, combine all-purpose flour, sugar, salt, and active dry yeast. Pour in warm plant-based milk and melted vegan butter. Knead the mixture until it's smooth and elastic, about 10-12 minutes.
  • First Rise: Cover the dough with a kitchen towel and let it rise in a warm spot until it has doubled in size, approximately 1-2 hours.
  • Make the Filling: In a small bowl, mix together the pistachio cream, brown sugar, and cinnamon until well combined and smooth.
  • Shape the Rolls: Gently roll out the dough into a rectangle. Spread the pistachio filling evenly across the surface. Roll the dough tightly into a log, and cut it into equal pieces. Place the pieces in a greased baking dish, cut side up.
  • Second Rise: Allow the shaped rolls to rise again until puffy, about 30-60 minutes.
  • Bake: Preheat your oven to 350°F (175°C). Bake the rolls in the oven for 25-35 minutes, or until they are golden brown on top.
  • Glaze: Once cooled slightly, drizzle a mixture of powdered sugar and a few tablespoons of plant-based milk over the warm rolls for a sweet glaze.
