Main Cooking Steps

  • Cook the Brown Rice: In a medium pot, combine the brown rice and water. Bring to a boil, then lower the heat and simmer for 40-45 minutes until tender and fluffy; set aside.
  • Sauté the Aromatics: Heat extra virgin olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until they become fragrant and translucent, about 5 minutes.
  • Bloom the Spices: Stir in ground cumin, ground coriander, and turmeric powder. Cook for about 30 seconds, allowing the spices to release their warm aromas and flavors.
  • Cook the Lentils: Add the rinsed lentils, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce to a simmer and cook for 25-30 minutes, or until the lentils are tender but still hold their shape.
  • Wilt the Spinach: Fold in the fresh spinach and cook until just wilted, about 2-3 minutes.
  • Final Seasoning: Remove the bay leaf, and season the mixture with salt, black pepper, and a squeeze of lemon juice.
  • Assemble the Bowls: Serve by layering a scoop of brown rice followed by the lentil and spinach mixture.

Notes
