Ingredients
  

Filling

  • 6 slices Bacon Cooked until crispy
  • 1 medium Onion Pre-cooked until softened
  • 4 Eggs Room temperature
  • 1 cup Cottage Cheese Dairy-free cheese for alternative

Crust

  • 1 package Pre-Made Pie Crust Can substitute with gluten-free crust

Optional Enhancements

  • Herbs Fresh thyme or tarragon

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the bacon in a skillet over medium heat until crispy. Remove and drain, then sauté the onions until soft.
  • In a mixing bowl, whisk together room temperature eggs, cottage cheese, and seasonings until smooth.
  • Line a muffin tin with pre-made pie crusts, distribute bacon and onions, then pour custard until filled ¾ full.
  • Bake for approximately 20-25 minutes or until filling is set and crust is golden brown.
  • Allow to cool slightly before serving warm or at room temperature.

Notes

For best results, pre-cook the bacon and onions to enhance flavor, and use room temperature eggs for a creamy custard.
