Ingredients
  

For the Salad

  • 1 cup Quinoa rinsed before cooking
  • 2 cups Water or Vegetable Broth
  • 1 cup Cherry Tomatoes halved
  • 1 medium Cucumber diced
  • 1 medium Bell Pepper (Red or Yellow) diced
  • 1/2 medium Red Onion finely chopped
  • 1/2 cup Kalamata Olives pitted and halved
  • 1/2 cup Feta Cheese crumbled
  • 1/4 cup Fresh Parsley roughly chopped

For the Dressing

  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice adjust based on taste
  • 1 teaspoon Dried Oregano or fresh for bolder flavor

Instructions
 

Preparation

  • Rinse the quinoa under cool water in a fine-mesh strainer to remove bitterness.
  • Combine the rinsed quinoa with 2 cups of water or vegetable broth in a medium saucepan and bring to a boil.
  • Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes until fluffy and liquid is absorbed.
  • While quinoa cooks, chop cherry tomatoes, cucumber, bell pepper, red onion, and olives. Combine them in a large mixing bowl with crumbled feta.
  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  • Once the quinoa has cooled slightly, add it to the mixing bowl of vegetables. Pour the dressing over and toss gently to combine.
  • Stir in chopped parsley and let the salad sit for at least 15 minutes before serving.

Notes

Refrigerate leftovers in an airtight container for up to 3-4 days. For best taste, prepare a day in advance to allow flavors to meld.
