Dumplings

  • 1 cup Whole-Milk Ricotta cottage cheese is a substitute
  • 1 cup Low-Moisture Mozzarella fresh mozzarella can enhance texture
  • 1/2 cup Parmesan Cheese nutritional yeast for vegan options
  • 1 large Egg use a flax egg for vegan option
  • 1 1/2 cups All-Purpose Flour a gluten-free blend can work

Instructions
 

Soup Preparation

  • Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent, about 5-7 minutes. Add minced garlic, tomato paste, and optional red pepper flakes; cook until fragrant, around 1-2 minutes.
  • Stir in crushed tomatoes, broth, granulated sugar, and dried basil. Bring to a gentle boil, then lower the heat and let it simmer for 10-15 minutes.
  • Blend the soup to your desired smoothness using an immersion blender or a traditional one. Stir in heavy cream and season with kosher salt and black pepper to taste.

Dumpling Preparation

  • In a mixing bowl, combine ricotta, mozzarella, parmesan, egg, flour, baking powder, garlic powder, salt, and parsley. Mix until a thick batter forms.
  • Carefully drop spoonfuls of the dumpling batter into the barely simmering soup. Cover and cook for about 6-8 minutes until they puff up.
  • Taste and adjust seasoning as needed. Ladle the soup into bowls and finish with a sprinkle of extra parmesan and a drizzle of olive oil or melted butter.
