For the Dough

  • 3 cups All-Purpose Flour
  • 2 teaspoons Instant Yeast
  • 1 cup Warm Water around 110°F
  • 1 tablespoon Sugar can reduce for less sweetness
  • 1/4 cup Olive Oil extra virgin recommended
  • 1 teaspoon Salt optimal taste

For the Toppings

  • 1 cup Spring Onions can use scallions as substitute
  • 1 cup Shredded Cheese mozzarella or cheddar
  • 2 cloves Garlic Cloves finely minced
  • 1 tablespoon Fresh Thyme or 1/2 tablespoon dried thyme

For Drizzling

  • 2 tablespoons More Olive Oil for added richness

How to Make

  • Gather your all-purpose flour, instant yeast, warm water, sugar, olive oil, and salt for the dough. Don’t forget your spring onions, shredded cheese, garlic, and thyme for the toppings.
  • In a large mixing bowl, combine flour, instant yeast, sugar, and salt. Gradually add warm water and olive oil. Stir until dough begins to form, then knead for about 8-10 minutes until smooth and elastic.
  • Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm, draft-free area until doubled in size, approximately 1 hour.
  • While the dough is rising, finely chop the spring onions and garlic. Set aside the cheese and fresh thyme.
  • Once the dough has risen, punch it down to release air. Turn it onto a floured surface and stretch it gently into a greased baking pan.
  • Using your fingertips, create dimples all over the surface of the dough. Spread your chopped spring onions and minced garlic evenly, followed by the shredded cheese and thyme.
  • Cover the topped dough again and let it rise for about 30 minutes until puffed and fluffy.
  • While the dough is rising, preheat your oven to 400°F (200°C).
  • Drizzle a bit more olive oil over the top, then bake the focaccia for 20-25 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
  • Allow the focaccia to cool in the pan for 5-10 minutes before slicing. Enjoy warm!

Notes

For extra flavor, serve slices with a sprinkle of sea salt or try different toppings like olives or roasted garlic.
