Cooking Steps

  • Preheat your oven to 180°C (350°F).
  • Season both sides of the cod fillets with salt and pepper.
  • Sauté the onion in a skillet with olive oil until translucent, about 5 minutes.
  • Add minced garlic and grated ginger to the skillet, cooking until fragrant, about 1-2 minutes.
  • Stir in coconut milk, lemon juice, and lemon zest, allowing it to simmer for a few minutes.
  • Place the seasoned cod fillets in a baking dish and pour the creamy sauce over the top.
  • Bake in the preheated oven for 20-25 minutes or until cod is flaky and opaque.

Notes
