Ingredients
  

For the Chicken

  • 4 pieces chicken breasts or chicken thighs for extra moisture
  • 2 tablespoons olive oil or avocado/grapeseed oil

For the Sauce

  • 2 cloves garlic fresh minced
  • 1 cup chicken broth or vegetable broth
  • 1 teaspoon fresh thyme or dried in a pinch
  • 1 teaspoon dried sage use dried herbs in a pinch
  • 1 cup heavy cream full-fat coconut milk as dairy-free option
  • 3 tablespoons Dijon mustard adjust for desired spice level
  • 1 tablespoon honey maple syrup for vegan alternative

  • to taste black pepper

Cooking Instructions

  • Pound the chicken breasts to an even thickness of about ½ inch, season with salt and black pepper.
  • Heat olive oil in a skillet over medium-high heat. Cook the chicken for 5-6 minutes on each side until golden and cooked through. Tent with foil to keep warm.
  • Lower heat and add more olive oil if necessary. Sauté garlic for 10 seconds until fragrant. Add chicken broth, thyme, and sage, simmer until reduced by half.
  • Stir in heavy cream and Dijon mustard, simmer until thickened. Add honey, season with salt and black pepper.
  • Return cooked chicken to skillet, coating well with sauce, or plate chicken and pour sauce over it.

Notes

Serve with crusty bread or over buttered noodles to soak up the sauce. Store leftovers in sauce for moisture.
