How to Make Ricotta Spinach Crepes

  • Blend the all-purpose flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for about 15 minutes.
  • Heat a nonstick skillet over medium heat, brushing it lightly with melted butter. Pour in 1/4 cup of batter, swirling to coat the bottom. Cook for 1-2 minutes until edges are firm and bottom is golden brown. Flip and cook for another 30 seconds, then transfer to a plate.
  • In a sauté pan, heat a splash of olive oil over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Add the fresh spinach and sauté until wilted and bright green, about 2-3 minutes.
  • In a mixing bowl, combine the sautéed spinach, ricotta cheese, grated parmesan, nutmeg, salt, and pepper. Mix until smooth and creamy.
  • Take a crepe and place it on a plate. Spoon the spinach and ricotta filling onto one side, then fold the crepe over or roll it up gently.
  • Preheat your oven to 350°F (175°C). Arrange filled crepes in a baking dish and bake for about 5 minutes to warm through. Serve with a drizzle of tomato sauce and a sprinkle of fresh basil.
