Baking Instructions

  • Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  • Whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl.
  • Mix the eggs, buttermilk, vegetable oil, and vanilla extract in a separate bowl until smooth.
  • Combine the wet ingredients with the dry mixture and stir in the hot water or coffee.
  • Spoon 1 tablespoon of batter into each cupcake liner. Add 1 teaspoon of creamy peanut butter in the center and cover with more batter until filled 3/4 full.
  • Bake for 18–20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Cool the cupcakes completely on a wire rack.
  • Beat together the unsalted butter and peanut butter for the frosting until creamy.
  • Gradually add the powdered sugar, milk, and a pinch of salt while continuing to mix until fluffy.
