Cooking Instructions

  • Preheat your oven to 375°F (190°C).
  • Pound the chicken breasts between pieces of plastic wrap until they are about 1/2-inch thick.
  • Mix the filling by combining ricotta cheese, Parmesan, spinach, basil, parsley, garlic powder, salt, pepper, and optional red pepper flakes in a bowl.
  • Fill each chicken breast with a generous scoop of the herbed ricotta mixture, roll tightly, and secure with toothpicks or kitchen twine.
  • Sear the rolls in a skillet with heated olive oil over medium-high heat for 3-4 minutes per side until golden-brown.
  • Transfer the seared rolls to a baking dish and pour marinara sauce over the top.
  • Bake in the preheated oven for 20-25 minutes until the internal temperature reaches 165°F.
  • Rest the rolls for 5 minutes before slicing and serving.
