How to Make Lemon Chicken Skewers

  • Begin by cutting the boneless, skinless chicken breasts into uniform 1-inch cubes.
  • In a small bowl, whisk together olive oil, fresh lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  • Pour the marinade over the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes.
  • Soak wooden skewers in water for 30 minutes if using. Thread the marinated chicken onto the skewers.
  • Fire up your grill to medium-high heat and grill the skewers for 4-6 minutes per side.
  • Serve the skewers hot with fresh lemon wedges alongside.

Notes

Allow chicken to marinate for at least 30 minutes, but do not exceed 2 hours. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
