Cooking Instructions

  • Caramelize Onions: Sauté sliced onions in olive oil and kosher salt over medium-low heat until golden brown, about 25 minutes.
  • Cook Mushrooms: In the same skillet, add more olive oil and toss in baby bella mushrooms. Cook until tender, about 5 minutes. Add minced garlic, thyme, and black pepper, cooking for another minute.
  • Combine Filling: Transfer the caramelized onions and mushroom mixture to a bowl. Mix in the shredded Gruyère cheese until well combined.
  • Prepare Pastry: Roll out the chilled puff pastry on a lightly floured surface. Cut into rounds and brush with beaten egg. Prick the dough with a fork.
  • Assemble Bites: Place a dollop of whole-grain mustard on each round, then top with a tablespoon of the filling.
  • Bake: Arrange filled pastry rounds on baking sheets and bake at 400°F for about 25 minutes.
  • Cool & Serve: Let the bites cool for about 5 minutes. Garnish with chopped parsley and serve warm.

Notes
