Ropa vieja translates to old clothes, a name that describes the way the tender, shredded beef looks after hours of cooking. This dish relies on a base of tomatoes, onions, and bell peppers flavored with cumin and oregano. The slow cooker handles the heavy lifting, turning a tough cut of beef into a tender main course.
Starting the meat in a hot skillet builds a browned crust that adds depth to the final sauce. Once the beef is seared, all the ingredients go straight into the crock pot. After eight hours on low, the meat pulls apart easily and absorbs the savory tomato broth.
Why will you love Ropa Vieja Crock Pot?
Searing the beef before slow cooking creates a caramelized exterior that deepens the flavor of the sauce.
Inserting whole garlic cloves directly into the roast flavors the meat from the inside out as it cooks.
Cooking on the low setting allows the connective tissue in the chuck roast to break down gently for easy shredding.
Ropa Vieja Crock Pot Ingredients
• Beef chuck roast: This cut has enough fat and connective tissue to stay moist during a long braise. Flank steak is traditional and works well as a substitute.
• Avocado oil: A neutral oil with a high smoke point prevents burning while searing the beef. Canola or vegetable oil will also work.
• Tomato sauce: Use plain canned tomato sauce, not pasta sauce. This provides the liquid base for the braise.
• Green chilies: Canned chopped green chilies add a mild tang and very subtle heat to the braising liquid.
• White vinegar: A small splash of vinegar balances the richness of the beef and the sweetness of the tomatoes.

How to Make Ropa Vieja Crock Pot
Step 1: Prepare and sear the beef
Cut small slits into the roast and tuck whole garlic cloves inside. Season the meat generously with salt. Sear it in a hot skillet with avocado oil until a dark crust forms on both sides.
Step 2: Combine ingredients in the slow cooker
Move the browned beef to your crock pot. Top it with the sliced onions, bell peppers, minced garlic, tomato sauce, green chilies, and spices.

Step 3: Cook and shred
Let the mixture cook on low for seven to eight hours. Once the beef is tender, pull it apart with two forks and stir it back into the warm tomato sauce.
How to Store and Freeze Ropa Vieja Crock Pot
Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and reheat in a saucepan over medium heat until the meat reaches 165°F (74°C).
Expert Tips for Ropa Vieja Crock Pot
Do not skip the searing step. Browning the meat is essential for developing a rich flavor in the slow cooker.
If the sauce seems too thin after shredding the beef, leave the slow cooker lid off and cook on high for 20 minutes to reduce the liquid.
Food safety: Beef whole cuts must reach a safe internal temperature of 145°F (63°C) with a 3-minute rest. For this recipe, the beef will exceed this temperature during the long cook time to become tender enough to shred.

What to Serve with Ropa Vieja Crock Pot?
Serve this shredded beef over warm white rice alongside Cuban-style black beans. It also works well as a filling for tacos or burritos.
Ropa Vieja Crock Pot Recipe FAQs
Can I cook this on the high setting?
Cooking on low yields the most tender meat. If you are short on time, you can cook it on high for 4 to 5 hours, though the beef may not be quite as soft.
Can I use flank steak instead of chuck roast?
Yes. Flank steak is often used for traditional ropa vieja. It shreds into longer, distinct strands compared to chuck roast.
Do I need to add beef broth?
No. The tomatoes, vegetables, and the meat itself will release plenty of liquid as they cook in the covered crock pot.
